Ingredients

  • 2 large chicken breasts cut into 1-inch cubes
  • 1 cup whole wheat breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 large eggs beaten
  • Olive oil spray

Instructions

  • Preheat air fryer: Set the air fryer to 400°F (200°C) and let it preheat for about 3 minutes.
  • Prepare breading: In a bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  • Coat chicken: Dip the chicken cubes into the beaten eggs, then roll them in the breadcrumb mixture, pressing gently to coat evenly.
  • Arrange nuggets: Place the coated chicken pieces in the air fryer basket in a single layer, ensuring they don’t overlap. Lightly spray with olive oil.
  • Cook: Air fry for 8-10 minutes, flipping halfway through, until the nuggets are golden brown and the internal temperature reaches 165°F (74°C).
  • Serve: Let cool slightly and serve with your favorite dipping sauces.

Notes

For extra crispy nuggets, double-dip the chicken pieces by repeating the egg and breadcrumb steps.
To save time, you can use pre-cut chicken tenders or pre-made breadcrumbs.
Adjust the seasoning to your liking by adding chili powder for heat or Italian seasoning for extra flavor.
