  • 1 large head of cauliflower, cut into florets

1 medium onion, chopped

2 garlic cloves, minced

2 tbsp olive oil

4 cups vegetable broth (or chicken broth)

1 cup milk (or plant-based milk)

½ tsp ground nutmeg

Salt and pepper, to taste

Optional toppings: croutons, fresh parsley, crispy bacon, or shredded cheese

Instructions
 

  • Prep the cauliflower: Rinse and chop the cauliflower into florets.

Cook aromatics: In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until softened and fragrant.

    Simmer the cauliflower: Add cauliflower florets and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the cauliflower is tender.

      Blend the soup: Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer it to a blender and blend in batches.

        Add creaminess: Stir in milk, nutmeg, salt, and pepper. Heat gently, but do not boil.

          Adjust seasoning: Taste and adjust salt and pepper as needed.

            Serve: Ladle the soup into bowls and garnish with your favorite toppings.
