Ingredients
  

  • 12 oz 340 g penne pasta
  • 2 large chicken breasts sliced thin
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 3 cloves garlic minced
  • 1 cup 240 ml heavy cream
  • 1 cup 240 ml chicken broth
  • ½ cup 50 g grated Parmesan cheese
  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • Fresh parsley optional, for garnish

Instructions
 

  • Cook the pasta in salted boiling water according to package instructions. Drain and set aside.
  • Season chicken slices with Cajun seasoning.
  • Heat olive oil in a large skillet over medium-high heat. Sear the chicken until fully cooked, about 4-5 minutes per side. Remove and set aside.
  • In the same skillet, add butter and sauté the garlic, red, and green bell peppers until softened, about 3-4 minutes.
  • Pour in chicken broth and bring to a simmer. Stir in heavy cream and Parmesan cheese, whisking until the sauce thickens.
  • Return the cooked chicken to the skillet and mix well. Add the pasta and toss to coat.
  • Season with salt and pepper, adjusting as needed. Garnish with fresh parsley.
